Pesto Chicken

  • 500g chicken breasts (approx 4 chicken breasts) 
  • 3 tbsp. pesto 
  • 85g mozzarella cheese 
  • 3 tomatoes, sliced


  1. Butterfly, bash or slice the chicken breasts so they are quite thin and in 4 serves. 
  2. Cook on a non stick frypan or in the oven on a lined baking tray. 
  3. Once cooked, transfer to a baking tray if you cooked them in a pan and top with the pesto, sliced tomato then cheese. 
  4. Oven bake or grill for approximately 10 minutes, or until cheese is golden. 
  5. Serve with a side salad or vegetables.
